The 2003 Fluminis is 50% Cabernet Sauvignon, 30% Garnacha Negra, and 20% Carineña. All clusters were hand-picked and selected both in the field and again on the sorting table before being de-stemmed and slightly crushed upon entering the micro-stainless steel tanks for alcoholic fermentation. The grapes were then fermented at 24ºC with soft punch downs performed three times a day over the 7 day period of maceration.
